Indian Spiced Pork Skewer

We love Indian Food and it is very hard to make  what you get at some of these amazing Indian restaurants.   This is a best bite recipe and a welcome change to the summer kabobs.   We all loved it.  Make it the morning, let it marinate all day . . .

Indian Spiced Pork Kabobs

1.5 - 2 lb pork tenderloin or sirloin pork roast
2 red bell peppers
1 large onion
1 Tbsp pressed garlic
1 Tbsp curry powder
1 1/2 tsp kosher salt
1/2 Tbsp cumin
1/2 Tbsp coriander
1/8 tsp cayenne pepper
1/4 cup fresh lemon juice
3 Tbsp extra virgin olive oil
1 Tbsp water

Cut pork into 1.5 inch chunks and place in a zip lock bag.  Prepare peppers and onions ahead of time and cut in square.  Store in frig all day.

Press garlic into a small bowl with garlic press.   Mix the garlic and salt in a small bowl with cumin, curry, coriander and cayenne.  Add fresh lemon juice (NOT Bottled, that is a sin to use that stuff) and olive oil and stir it all up.

Pour spice mixture in bad with pork.  Seal and give it a good smoosh.  Let sit in fridge all day long.

Alternate on skewer and grill.  Don't over cook.

SIDES :   coconut rice, cucumber salad

3/4 cup white sugar

Relish Appetizer

1 package of cream cheese (never use fat free, nasty. Reduced fat tastes great)
1 jar of Harry and David Pepper and Onion Relish
1 can of corn
1/4 cup diced red peppers
2 tsp. dried chili peppers

Place cream cheese on platter. Combine all the other ingredients and pour over cream cheese. Serve with your favorite crackers (wheat thins, costco rice crackers, ritz, what- eva you want).
