My mom made this for us on Easter. It is now a family favorite.
1/2 cup unsalted butter
1 cup packed brown sugar
2 Tbsp. corn syrup
bread, sliced, to cover butter mixture
5 large eggs
1 1/2 cup half and half (they have fat free half and half)
1 tsp vanilla
1/4 tsp. salt
In a saucepan, melt butter, brown sugar and corn syrup. Pour into a 9 x 13 inch glass baking dish. Arrange bread pieces on top. Beat together eggs, half and half, vanilla and salt. Pour egg mixture over the top of the bread. Cover and chill overnight in the refrigerator. The next morning, bake uncovered at 350 degrees for 35 - 40 minutes.

Creamy Oatmeal
I love oatmeal and the boys like oatmeal. However they really enjoy the dinosaur egg oatmeal that you buy in a box that has a trillion grams of sugar so I have been trying all different brews of oatmeal to get the one that they will eat and does not have all the sugar. Here it is . . .
1/4 cup dried apricots or craisans
2 cups skim milk
1/3 cup brown sugar
1 cinnamon stick
3 whole cloves
1 tsp vanilla
1/4 tsp kosher salt
1 cup steel-cut Irish oats
2 cups water
Place apricots in a small bowl with hot water to cover, and let stand 5 minutes or until plump. Drain.
Cook milk, next 5 ingredients and 2 cups water in a heavy non aluminum saucepan over medium heat, stirring often, 5 - 6 minutes or until bubbles appear (do not boil). Remove from heat; remove cloves and cinnamon stick (I leave the stick in but remove cloves) and discard
Add 2 cups water and 1 cup of steel cut oats. Simmer for 20 - 35 minutes. Add dried fruit and sprinkle with a little cinnamon.
Serves 3 - 4

1 T. all purpose flour
3 T. brown sugar, packed
1/4 tsp. ground cinnamon
1/8 tsp. grount allspice
1/2 tsp. baking powder
1 C. milk
1/2 tsp vanilla
day-old white bread slices 3/4 to 1 inch thick - texas toast
Beat eggs together lightly in bowl. Add flour, sugar, cinnamon,
allspice and baking powder. Beat to mix.
Add milk and vanilla. Mix. Pour about 1/3 mixture into greased
9/13 inch pan.
Arrange bread slices to fit over mixture in pan. Pour remaining
mixture evenly over top. Cover. Let stand in refrigerator
overnight. Uncover. Bake in 425 degree oven for 15 minutes unti browned. Makes 6 slices.

Breakfast Casserole
This has become a Sunday morning favorite around here. I get everything done the night before, cook the hashbrowns, bacon, etc. Got this from Heather Whites Blog.
Breakfast Casserole
1 large bag of frozen hashbrowns, thawed
½ cube of butter, melted
Spray 9x13 pan, spread THAWED hash browns in pan. Pour butter over top of hash browns. Salt and Pepper to taste. Bake at 425 for 25 minutes. (This can be done the night before and you can refrigerate hash browns after cooking them and then continue with the recipe the next day . . . or you can do it all at once.)
Mix 8 oz shredded Cheddar Cheese and 8oz Pepper Jack Cheese (this is the secret ingredient – YUM)!!
Choose ham, bacon, sausage (cooked and crumbled) whatever you want. Desired amount. I use one pkg. Cooked bacon. Spread over cheese layer.
Mix 5 eggs and 1 cup milk – pour over entire casserole. Salt and Pepper to taste. Bake at 375 degrees for 30 – 40 minutes. ENJOY!!

4 Tbsp stick margarine or butter (I always try to use butter)
4 large eggs
1 cup all purpose flour
1 cup milk
1/2 tsp salt
Heat oven to 400 degrees. Melt margarine in a glass 9 x 13 dish in oven. When melted pull out of oven and rotate the melted butter around to coat the pan well.
Add eggs to blender and blend well. Slowly add milk, flour and salt. Blend well, careful not to over blend. Pour into pan.
Bake 25 - 30 minutes or until puffy and deep with golden brown. Serve immediately. We like fresh lemon juice and powder sugar or maple syrup and powder sugar!!

Blender Pancakes
I love when I am always the last to know, which is usually all the time. A girl was talking about blender pancakes and was shocked that I had not heard of blender pancake. She was raving about how easy they were and an easy way to go through some of your wheat storage. I tried them and they are not bad, the boys ate them right up and it was an easy thing to whip up before getting kids off to school.
1 cup whole wheat berries
1 1/4 cup milk
Place in blender and blend on high speed for 2 - 3 minutes.
Add the following and blend one minute more:
1 egg
2 Tbsp. sugar or honey
2 Tbsp. cooking oil
1/2 tsp. salt
1 tsp. baking powder
Bake on hot, greased griddle until bubles form on top. Turn and cook on the toher side until golden brown. CAUTION: this recipe requires a very STRONG blender. Check with the manufacturer before trying, I offer no blender insurance.
