Sugar Cookie Bar

My sister in law should just start her own food blog cuz I steal all her recipes and LOVE them.  Another one of Auntie Em's.

1 cup butter, softened
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
5 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
Cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla and almond and mix well. In a separate bowl, combine the flour, salt and soda. Stir with a whisk to combine. Add dry ingredients to wet mixture and mix just until combined. Spread on a greased baking sheet (half sheet/jelly-roll pan) and bake at 375 for 10-15 minutes (until they're just barely starting to brown). Let cool. Frost and cut into bars.
White Wonder Frosting
8 oz cream cheese, softened
1/2 cup softened butter
4-5 cups powdered sugar
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
food coloring any color you want
Blend until smooth.

Lemon Cookies

My Idaho Falls friend Hilary is my own Martha.  Everything she does is perfect, delicious, crafty and simply amazing.  She and a few of my other crafty, good cooking friends post recipes on a blog (http://whatweeat-friends.blogspot.com/) and I enjoy many of them.   This has been one of my favorites.  This is another recipe where people ask for the recipe whenever I take it somewhere. 

LEMON COOKIES
2 c. sugar
1 1/2 cup butter flavored shortening
3 eggs
2 tsp. vanilla
1 tsp. lemon extract
4 c. flour
1 1/2 tsp soda
1 1/2 tsp baking powder
1 tsp. salt
Finely chopped zest of one lemon
1 (6-oz) package lemon drops (sometimes these are tricky to find, I usually keep two or three bags in my pantry)
2 c. powdered sugar
juice of two lemons

Preheat oven to 350 degrees. In mixing bowl, cream sugar, shortening, and eggs; add flavorings. Stir in dry ingredients, lemon zest, and crushed lemon drops (I crush them in my blender). Roll into balls, flatten slightly, and bake on parchment lined (if you don't use parchment, cookies will stick to pan) baking sheet for 10 to 12 minutes. Let cool slightly on pan for a couple of minutes. Make a glaze by mixing powdered sugar with lemon juice. Brush glaze over cookie tops. Let cookies cool completely.



makes 4 to 5 dozen cookies.

Molasses Cookies

This are scrumptious if you like more of a chewy kind of molasses cookie.  Great for the holiday season.  I got this off Confessions of a Bakeaholic blog.  

Molasses Cookies


¾ c. shortening, melted
¼ c. molasses
1 c. sugar
1 egg
2 c. flour
2 tsp baking soda
1 tsp cinnamon
½ tsp cloves
½ tsp ginger
½ tsp salt
Melt shortening in a saucepan over low heat. Let cool. Add sugar, molasses and egg. Mix well. Sift together flour, soda, cloves, ginger, cinnamon and salt. Add this to first mixture. Mix well. Chill. Form into 1 inch balls. Roll in granulated sugar and place on un-greased cookie sheet. Bake at 350 for 8-10 minutes

Rolo Cookies

Michelle Y brought me these one night. It was a "delightful" late night snack that I managed to eat all by myself.

ROLO COOKIES
1 cup butter, softened
3/4 cup brown sugar
3/4 cup white sugar
1 pkg. rolo candies
1 tsp vanilla
1 Tbsp water
2 cups flour
1 tsp baking soda
1/2 tsp salt
2 eggs

Cream butter and sugars. Add eggs, vanilla and water. Beat until light and fluffy. Mix flour with baking soda and salt and add to creamed mixture. Shape cookies into small balls. Press rolo into center of ball and cover. Bake on a ungreased cookie sheet at 350 for 8 - 10 minutes.

Banana Chocolate Chip Cookies

Ok I got this from Oprah. I have recently broke up with Oprah. It was a nasty break up. I am free and happy now!! I feel like a ton of bricks has been lifted off me. I joined the anti Oprah group on facebook. What I did get out of our relationship this awesome cookie recipe that is low fat.

BANANA CHOCOLATE CHIP COOKIE

1/2 cup butter, softened
1/2 cup unsweetened applesauce
1 cup raw cane sugar (Turbinado)
3 ripe medium bananas, mashed
2 large eggs
1 tsp pure vanilla extract
2 1/2 cup unbleached all purpose flour ( I use half white half wheat flour)
1 1/2 tsp baking soda
2 cups quick cooking oats
1 cup semi sweet chocolate chips

Preheat over to 350. Coat 2 baking sheets with cooking spray and set aside. In a mixing bowl, combine the butter and applesauce and beat with an electric mixer until creamy. Add sugar, bananas, eggs and vanilla. Beat until smooth. Gradually add the flour and baking soda. Stir in the oats and chocolate chips until incorporated. Drop the dough by teaspoon onto the prepared baking sheets. Bake for 7 - 10 minutes or until golden brown. Transfer to wire rack to cool!!

Bodily's Chocolate Chip Cookies

Good cookies, however the dough (which I love more than the cookies) is not to great. But the cookies are fantastic!! I have lots of GREAT cookie recipes from Tiff!


Bodily Chocolate Chip Cookies

1 1/2 cup brown sugar
2 cups shortening
2 tsp. vanilla
1 tsp. salt
1 cup chocolate chips - mini
1 1/2 cup white sugar
4 eggs
2 tsp baking soda
5 cups flour
1 cup mini M&M's

Beat sugar, shortening, eggs and vanilla. Add baking soda, salt and half of the flour, mix well. Stir in remainder of flour and chocolate chips / M&M's. Roll into balls the size of walnuts, place on a greased cookie sheet and bake at 350 for 11-14 minutes or until light brown. Makes 6 dozen.

I like to roll the cookie dough in balls. Set all the balls on a a cookie sheet and freeze. Once the cookie dough balls are frozen I separate into little freezer bags (12) and freeze. Then when I need a quick dozen cookies they are done.

Our Family Favorite

Ok a friend in Idaho Falls baked these one afternoon for us and I have made these ever since. These are our families chocolate chip recipe. I grind my own white wheat for this recipe. I roll them in balls, place them on a cookie sheets and once they are frozen I put them in plastic bags. I like to freeze the dough and not he cookies. That way when I really feel weak I can just go grab some dough to eat.

Chip Chop Cookies


2 cubes butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
2 cups flour ( I used my grinded white wheat)
2 ½ cups oats (floured)
1 tsp. baking powder
1 tsp. soda
½ tsp. salt
2 bags chips (any kind, mixing a bag of chocolate and peanut butter is good)

Bake at 375 for 8 – 10 minutes.
