Coconut Rice

A delicious side when you want rice but something with a little more flair than, oh say . . .   plain old rice.

Great with citrus flavored meat or Indian or Thai food.

COCONUT RICE

2 cups jasmine rice (the only rice I use anymore)
1 can coconut milk ( I use the light kind and it works just fine, coconut milk is very fatty and bad for the old heart)
2 cups water
1 tsp kosher salt
splash of white vinegar
2 - 3 tsp. white sugar
Green onions (chopped all the way up, use the green)
Black pepper to taste

Combine rice, coconut milk, water, salt, vinegar, and sugar in a saucepan and bring to a boil.  Turn heat to low and cover for 20 minutes or until most of the liquid is absorbed.  Allow to stand 5 minutes.   Add green onions, black pepper, and additional salt.
